We buy from farms up the valley, butcher it ourselves and make the sausage, bacon and pies in the back of the shop. Nothing bulked out, nothing pumped with water.

The shop opened on the market place in Hexham in 1936. Three generations have stood behind the counter since, and the recipes are still in the same notebook hanging in the back.
Good sausage starts with good meat, so we buy from farms in the Tyne valley and up Allendale that we have dealt with for years. We know what the animals ate and where they came from, and you can taste it.

Which farm is this from? We can name it, and it will be within about 25 miles. If a shop cannot tell you, that is worth knowing before you buy the joint.
What is in the sausage? Ours is meat, rusk, seasoning and a natural skin, and the percentage is on the ticket. No mechanically recovered meat and no added phosphate.
Has the bacon had water added? Ours is dry cured, so it fries rather than boils in its own liquid. It costs a little more per kilo and you get more on the plate.
